Love barbecuing but not all the calories that come along with it? Give our new twist on BBQ a try! This recipe is simple, tasty, good for you, and practically cooks itself in a slow cooker! Here is what you will need:
Ingredients:
- 4 cloves garlic
- ¼ cup lemon juice
- 2 tbs. olive oil
- ½ tsp. salt
- ½ tsp. ground black pepper
- 8 skinless boneless chicken breast halves
- 25 oz. bottled BBQ sauce
- 8 butter lettuce leaves
Instructions:
- Mix together garlic, lemon juice and olive oil in a large bowl.
- Place chicken in mixture and coat.
- Add BBQ sauce to the bowl and combine all with large spoon.
- Place the bowl of chicken and sauce into slow cooker, and cook on high for 4-6 hours.
- Shred chicken.
- Spoon shredded chicken into lettuce leaves and enjoy!
