A Healthy Twist on a Summer Favorite: Summer BBQ Lettuce Wraps

kid-673584_1280Love barbecuing but not all the calories that come along with it? Give our new twist on BBQ a try! This recipe is simple, tasty, good for you, and practically cooks itself in a slow cooker! Here is what you will need:

Ingredients:

  • 4 cloves garlic
  • ¼ cup lemon juice
  • 2 tbs. olive oil
  • ½ tsp. salt
  • ½ tsp. ground black pepper
  • 8 skinless boneless chicken breast halves
  • 25 oz. bottled BBQ sauce
  • 8 butter lettuce leaves

Instructions:

  • Mix together garlic, lemon juice and olive oil in a large bowl.
  • Place chicken in mixture and coat.
  • Add BBQ sauce to the bowl and combine all with large spoon.
  • Place the bowl of chicken and sauce into slow cooker, and cook on high for 4-6 hours.
  • Shred chicken.
  • Spoon shredded chicken into lettuce leaves and enjoy!
